Professor Barry C Smith of the University of London argues that AI will never be able to replace the human element of tasting. He emphasizes the importance of combining human expertise with AI technology to achieve the best results.

Despite the debate, one thing is clear: AI is here to stay in the wine and spirits industry. Hollands points out that AI is already integrated into our daily lives, whether we realize it or not. He believes that AI can level the playing field for smaller companies, allowing them to compete with larger businesses by leveraging new technologies.
